I am going to bake some fish add some fresh veggies with a salad to go with it.Maybe I will bake some fresh bread..maybe.

It was going to be meatloaf and twice baked potatos and salad. But a case of laziness has overcome me and now it is;
Cheese tortellini with marinara
Garden salad
Iced green tea

Pork chops fried in onions mashed potatoes and broccoli. Nothing fancy and easy for the cook.
Made from chunks of bone-in ham with Dijon-Honey glaze. I simmer the bone, and chunks of ham in chicken broth with bay leaves. Bring to a boil:15-bean package of HamBeans with seasoning packet (rinsed and soaked overnight)
Add and simmer (3 hours):
Diced tomatoes
Fresh garlic
Diced onion
Chopped celery
Chili powder
Lemon Juice
Kosher salt
Pepper
Topped with dollop of sour cream, chopped green onions and served with honey and croissants on the side.

If the stuff in the box is the same as the picture on the box, I'll be having fish. It's pinky-beige so probably salmon. But you just never know.
So far it's been home made chocolate chip
cookies but there's a cold beef tenderloin in the fridge that
I have my eye on. That and maybe some prepackaged cole
slaw. Sad but true...

In all due respect of your love for the dreaded buttermilk. I hate let me make this perfectly clear I HATE buttermilk,. Im sure it has something to do with the fact that my mom drink HUGE quantities while pregnant with me. Funny story that I wont go into right now.

I have been KNOWN to use fatback however I now know it isnt good for you I just know my dr is reading what i write so i wont say i still use it in my veggies

Ohhhh yummmm...tonight's dinner was so much better than my mess up last night. My roomie and I have declared that there's two things I'm not allowed to cook...Squash Fritters and modified recipe for melt in your mouth chicken.
Tonight the roomie made the REAL melt in your mouth chicken with my favorite Silver Queen Sweet corn that we had put up this year. Love my local veggies !

I'm not sure what will be the final dinner menu yet. Today was the day to go through the refrigerator and figure out what needed to be used (one so nothing goes to waste and the other to make room for the groceries).
So, I found enough stuff to make a veggie soup, which is in the crock pot.
Also, found stuff to make myself an onion, spinach, mushroom, and chicken pizza (thinking that's a good lunch)
I had pulled out some chicken earlier. So, I need to cook that up. Not sure how yet..but I'll figure it out.
so, yeah...that's where I'm at so far *shrugs*

my boy is in trouble... I bought 4 cookbooks today at the Books Are Fun table... I do love his cooking.. It will give him time to come up with a plan for the next meal he cooks for me.... tonight.. I have no idea.

Well, truth be told I don't use fatback when cooking. Occasionally for a holiday meal if the "older generation" is coming over. I had to laugh one year at my aunt's house. I peeked in the bean pot and she had several slices of uncooked bacon simmering away with the veggies. She told me she used bacon instead of fatback as she was "on a healthy eating kick." :|
My *buttermilk* fried chicken is the best! I even remove the skin and it still fries up nice. But I rarely fry anything anymore, just so bad for you, which is why I love my grill!
Tonight is leftover roast beef au jus over egg noodles from the night before. Easy! Dessert is movie popcorn as taking the kiddo to see "Frozen."
Roasted turkey breast, roasted rosemary taters, roasted garlic, and garden salad.
Filet Mignon (medium rare) and twice-baked potato. Steamed broccoli. Helping of sauteed mushrooms and onion in fresh garlic and olive oil. Wine tonight: a well-made Washington Merlot that has a percentage of Cabernet Sauvignon.

In the following order and spaced over about 3 hours:
Fudgesicle (sugar free although I couldn't tell)
An avocado with lime and salt
Tiny bit of left over Cuban black beans and rice (I'm sad it is gone)
Rare roast beef wrapped around a pickle
A spicy dill pickle
A Fresca
A handful of wasabi peas
A glass of water with lime squeezed in
Some blueberries and raspberries
I think I am done now

Tonight's dinner or lunch,as the ham has been cooking while I have been watching late night T.v. so it's cooled and in the fridge so I can slice it later today.I'm not sure what to put with it yet but will figure it out at some point.

At work today the cook/co worker made meatloaf stuffed with spinich and bacon and cheese,with baked potato, waldorf salad.
Salmon salad made with hard-boiled eggs, dill weed, mayonnaise, Dijon, red onion, Kosher salt and pepper stuffed in whole wheat Pita bread with lettuce, tomato and and a schmears of cream cheese.
My home-made Tomato Bisque soup (tomato soup, diced tomatoes, butter, cream, and seasonings to taste), chips and pop on the side.

I layered thinly sliced carrots, quartered potatoes, boneless, skinless chicken thighs, and onions, peppers, and garlic sautéed with cinnamon, paprika, and red pepper flakes.
The spicy chicken stew smelled so good that we ate dinner at 5:00 pm. :|

Had some with hard shell, some we put a tortilla wrapped around hard shell one.
(ground beef, shredded cheese, lettuce, salsa, olives, sour cream & tomatoes)
Tomorrow thinking make more chili with the rest of the meat
Hot dogs...it was quick and easy

Making chili, which is now going to be my third time making :) Sooooooo delicious!!!!! Will freeze some up for my girl (f) for when she comes home for a visit :)

Last night we had roasted chicken with lemon, pepper, black lava salt, bacon slid between the skin and meat, oregano, and greek seasoning. Cheesy potatoes and yeast rolls on the side.
Tonight we are having spaghetti with sauce I have been simmering all day, a greek salad with calamatas, feta, and raspberry vinaigrette, and garlic bread.

well... I'm thinkin a day ahead so in the morning I'm putting a pork roast in the crock pot with potatoes and onions... Served over rice... Tonight its steak and eggs breakfast

I'm sad it's gone, too. I love black beans and rice served with olive oil, fresh tomatoes and green onions and sour cream. I like a main dish of baked pork chops, or sauteed pork shoulder steaks as the main course. Always...black beans and rice and pork which is Brazilian. I've made black beans and rice from scratch, but as a nice short cut and time saver...I recommend Vigo black beans and rice with seasoning packets (black and pale yellow packaging)...delicious... and then top them with fresh ingredients above. Vigo has great black and red beans and and yellow rice combinations. If you're not familiar with Vigo dry products, ask your grocer.

Yesterday it was 70 degrees and sunny. While at the market I bought two beautifully marbled rib eyes. I went to take them out to season this morning and the weather channel said today the high would be 38 with high winds, and temps to drop all week long. So I had to put the steaks in the freezer for another day and this made me :bigcry:
Consequently tonight will be beef taco salads in a soft shell bowl with all the fixin's, corn on the cob and fat free chocolate pudding for dessert.

Lastnight: chicken with thinly sliced lemon, fresh rosemary and garlic. Side dish-- baby fresh brussel sprouts baked with apple wood bacon and tossed in cranberries at end.
Tonight: Leftovers-- wife will probably eat that and I'll eat some mexican brisket made from Sunday. Slow cooked brisket with chili powder, onions, garlic and some beef broth. I'll eat it with guac and spinach.

ok..so the afternoon was crazy and gren and I had a crazy late lunch. Therefore, this will be tomorrows dinner. I tossed a couple pizzas in the oven for the kids.
McDonalds drive thru. I know I know !!! But I was way too hungry and way too tired .

Broccoli, cauliflower, fresh green beans, baby bella's and fresh garlic. All tossed in olive oil, a bit of sea salt and fresh black pepper. Currently being roasted and caramelized to perfection in an extremely hot oven.
It's soup weather but the only soup I have is a small can of Dinty Moore turkey stew that has 900 mg of sodium. :| That's not happening.
Think it is going to be tuna melts and fries.

I have recently discovered Pita's Republic, which is basically the Mediterreanean/Greek equivalent of Subway. I'm going to have a vegetarian falafel, eggplant, and hummus pita and a side Greek salad.
And I may not be able to wait until dinner time, lol. My tummy is rumbling already! :)

I'm teaching a cooking class featuring dinner pies, and hope to be eating some leftovers.
Which will include:
Mushroom Pie with cornmeal crust
Vegetarian Shepherds Pie with vegan gravy
Cauliflower Pie with brown rice crust.
Zucchini Pie with loads of basil and dill and no crust.
Curried sweet potato pie with a pecan crust.

It's my roomie's turn to cook...he text today to ask what kind of soupI wanted (Brunswick stew, veggie or "hamburger girl scout soup"....
Now I admit...I was raised in the south, moved up north for many years, was a girl scout in.elementary school because mom was the "leader"...then moved back south....in all my travels I have never heard of "hamburger girl scout soup"....
I thought girl scouts sold cookies...for some strange reason I now have an image of a Troupe of Scouts going door to door in their "Beef on Wheels" or Burger in a Van" food truck.
Suddenly I'm not very hungry ...

It's my roomie's turn to cook...he text today to ask what kind of soupI wanted (Brunswick stew, veggie or "hamburger girl scout soup"....
Now I admit...I was raised in the south, moved up north for many years, was a girl scout in.elementary school because mom was the "leader"...then moved back south....in all my travels I have never heard of "hamburger girl scout soup"....
I thought girl scouts sold cookies...for some strange reason I now have an image of a Troupe of Scouts going door to door in their "Beef on Wheels" or Burger in a Van" food truck.
Suddenly I'm not very hungry ...

The last quarter of a Costco bbq chicken (best chicken deal there is), chopped up into some boxed chicken broth with a can of mushrooms tossed in and a few packs of soya sauce ( from some long ago Chinese food takeout) . Wasn't too bad. Maybe one day I'll combine all my "classic" recipes into a book called " Food for People Who Can Barely Be Bothered to Cook".

i went to a ranchers meeting / classes last night and they served prime rib for dinner. The meat was from a local rancher and it was great! I had left overs because they gave me a huge portion. I baked up potato, steamed some kale and a glass of CA red wine. Yummy!

tonight I made baked maple salmon, cabbage and carrot casserole, and Italian herb baked slice potatoes.
Sunday -- I prepared about 3 dishes for this week.
Cilantro Chile 'crockpot' Chicken
Lemon Garlic Rosemary baked Chicken
Asian marinated Pork Chops
Made a few sides -- or prepped sides for aboves dishes.
Guac and cilantro, lime wedges, and salad cups
Cut and trimmed white cauliflower for mashing
Slaw with red peppers, carrots, snap peas, green onion marinated in asian marinate.
But tonight-- we're having roasted beets glazed with a aged balsamic vinegar, mixed in with greens and some goat cheese. (this will be a large salad).

Today was beautiful so I couldn't resist to use my grill...(it's supposed to be 22° tonight)...
WHEN ROOMMATE GETS HOME ...I just pulled everything off grill...
slow grilled pork loin thick cutlets first braised over hot coals with a light coating of olive oil and Sweet Mesquite BBQ dry rub....after getting good grill marks I placed them over a bed of apples and onions (in my special grill pan) sitting in a cup of apple cider and table spoon of brown sugar ....closed tight with foil ...then placed directly over medium heat coals...roasted for a little over an hour...
Also my famous grilled potatoes done in a special pan with olive oil and "veggie spices"...
Tender brussel sprouts sauteed with a little bacon
Maple BBQ beans...
and deviled eggs made from the beautiful eggs our 9 "free range" chickens give me every day...
Have I mentioned I love to grill in the winter !!!

Grocery store "sushi". It's ok if you get it before the Best By date is passed and the rice hasn't dried out. It's not like you can stick it in the microwave for a little "perk-up".
I just realised there are two threads where I'm grateful for every post and generally thank everyone: this thread and the stereotype breaking thread.. nourishment for the belly and the brain.
Today I made spam musubi for the first time (I've been craving it even though I've never had it) and avocado and tomato salad with balsamic. It was yummy, and my kids liked it too.
Beef pot roast. Before you get too excited it was hormel frozen, I just stuck it in the microwave. It was edible.

I wish my other friends were here...I miss dinner time deep conversations and Femme bonding ...I'm making eggplant parmesan (first fried in a lite olive oil with a thin coating of Italian bread crumbs...just enough to get pretty grill marks and a nice crunch to the crumbs) ...with fresh butter sauteed mushrooms in a savory sauce over toasted garlic bread, then placed under the broiler to melt the cheese to a beautiful bubbly toasty color....

I am going to close my eyes and point to something. I haven't a clue tonight what we are having. Im feeling lazy, then again I'm not. Yes, it's one of those I cannot make up my mind night. *shrugs* maybe I'll just have cereal ;)

peanut butter and crackers because I didn't get paid again.
My partner hasn't been paid since the middle of December either. so frustrated.
Start new job Monday, first paycheque I am going to bar b q steaks with a bottle of wine.
The plan is for me to make lasagna. I cannot even remember the last time I made that. Mom makes it a few times a year and I get some :). Son says one of his fav dishes sooooo I will give it a try.
My son loves my mom's lasagna and tonight he said " Mom, you can compete against Nan (my mom), this is good" He had a full plate along with 2 Pillsbury crescent rolls, as did I :)

I'm thinking Chicken Giardino...I found the recipe on the olive garden website.
OK, so during the prep work of making dinner I nearly sliced off the tip of my finger and ended up in at the walk in clinic. So, this will wait until tomorrow....frozen pizza all round *shrugs*
